Simple Summer Appetizer Recipe
Summertime is all about fresh ingredients, punchy flavors and recipes that require no cooking. This simple summer appetizer recipe checks all those boxes. Using fresh vine-ripened tomatoes, crunchy cucumbers, olives, hummus and feta cheese, the flavors create a mouthful of yumminess with every bite!
Serve this easy dip with toasted pita triangles or with store-bought pita chips. Either way, your guests will be devouring this layered hummus dip!
How To Make Layered Hummus Dip
Making this simple summer appetizer recipe is easy and can be done a few hours ahead of serving. I love recipes that allow me flexibility and save time allowing you to prep your main dish.
Chop up the tomatoes, olives and cucumbers into bite sized pieces. You want the ingredients to be scoopable with your pita chips. So, I cut the grape tomatoes and persian cucumbers into quarters and gave the kalamata olives a rough chop.
Spoon your hummus into a shallow plate or dish. I like to buy pre-bought hummus from the grocery store. You can buy classic flavor or lemon. Either way works great with this summer appetizer.
Add the tomatoes on top of the hummus, followed by the cucumbers, olives and then top with a sprinkling of feta cheese. This layered hummus dip comes together so easily.
You can put some freshly chopped mint or oregano on top to add an extra dose of fresh flavor to this simple summer appetizer.

If you make it ahead of time, just cover with saran wrap and keep in the refrigerator. Take out an hour or so before serving and serve with pita chips.

Layered Hummus Dip
Ingredients
- 10 oz Hummus
- 1/2 cup Tomatoes chopped
- 1/2 cup Cucumbers chopped
- 1/4 cup kalamata olives chopped
- 1/4 cup feta cheese
Instructions
- Spoon the hummus on a serving dish. Spread evenly about 3/4-1" thick.
- Top with tomatoes, then cucumbers and olives. Finish with a sprinkling of feta cheese.
- Serve at room temperature with pita chips.
