This recipe for creamy iced coffee popsicles is my favorite non-guilty treat during the summer months. Paleo and vegan with only 3 ingredients, this recipe can be mixed together in just a few minutes!

Creamy Iced Coffee Popsicles Recipe
These coffee popsicles are absolutely delicious and the perfect summer dessert or afternoon snack. I also think they would be a great dessert to bring to a family backyard party. You could use decaf coffee if you want to make them kid friendly as well!
What makes these popsicles so creamy and delicious is using whole fat coconut milk. And to keep the creamy consistency I used instant espresso powder. I tried making these iced coffee popsicles with cold brew coffee, but the coffee watered down the mixture and the popsicles weren’t as yummy and creamy!
What I love about this recipe is that you can tweak it to suit your own taste buds. You really can’t ruin the outcome. You could use almond milk or even a low fat coconut milk. And you can also adjust the amount of instant coffee or espresso powder to make the coffee flavor less or more intense.

Healthy and Paleo Popsicle Recipe
To make these healthy iced coffee popsicles, you only need three ingredients and a blender. Add the can of coconut milk to the blender. Then add in your desired amount of instant coffee or espresso (I used 1 tablespoon).
Next, add the maple syrup and blend well.
Taste and adjust the sweetener and coffee as needed. You could also add in a teaspoon of vanilla extract if you want to add a little flavor.
Once the mixture is blended to a creamy consistency, pour into your popsicle molds and pop them in the freezer. Freeze for at least 3 hours, until frozen through. Run the mold under warm water to loosen and serve these iced coffee popsicles frozen.

- 1 can unsweetened coconut milk
- 1 tablespoon instant espresso powder or instant coffee
- 2-3 tablespoons maple syrup
Instructions
- Add all ingredients to the blender and blend until smooth. Pour mixture into popsicle molds and freeze in freezer for at least 3 hours or overnight.
