These fresh strawberry muffins are healthy and so yummy! The recipe comes together quickly using fresh summer strawberries and whole wheat flour, making them healthy and perfect for busy mornings.
Summer brings two of my favorite things in season: strawberries and peonies! I have loved the taste of sweet berries since I was a kid. I remember sprinkling a bowl of fresh strawberries with sugar and eating them as dessert. Now, my daughter requests this summer treat nightly! To say we are lovers of strawberries is putting it mildly.

Now that fresh, organic strawberries have been hitting the stands, I wanted to make a healthy muffin filled with juicy, ripe strawberries. Yum!
My kids love to have muffins for breakfast. And before sending them off to school I want them to have a healthy option to start their day. I kept that in mind when making these fresh strawberry muffins. I wanted something that I knew would fuel their bodies but also be something they wouldn’t complain about eating (hello finicky eaters)!
These strawberry muffins are made with whole wheat flour to add some fiber. I used 1 cup of whole wheat and 1 1/2 cups of all-purpose flour. You could very easily change this ratio to suit your families tastebuds. I just knew that my kids were more likely to gobble these up with a smoother consistency.
Now, I also added some greek yogurt to add some protein. I love the way the yogurt makes the muffins extra moist too.
How To Make Healthy Strawberry Muffins
Making these fresh strawberry muffins is pretty easy. Using pantry staples plus fresh strawberries and yogurt, you can be enjoying a warm muffin spread with butter in just under an hour from now!
First, mix the wet ingredients together in a big mixing bowl. You can choose to use an electric mixer or the old fashioned way. Either way works for this recipe! I love one-bowl recipes. If you do too, check out my recipe for Pumpkin Chai Muffins!
Once the wet ingredients are incorporated, gradually add in the flour, mixing in between to reduce lumping. Next add the sugar, salt, baking powder and baking soda. Stir until smooth.
Next, add in the strawberry jam. You can either leave the batter swirled with the bright color, or thoroughly combine. Lastly, gently fold the diced strawberries into the batter.
Scoop the batter into greased muffin tins and bake at 350 degrees for 25-30 minutes.

Healthy Fresh Strawberry Muffins
Ingredients
- 1/2 cup salted butter melted
- 1 cup milk I used whole milk, but any work
- 1/2 cup greek yogurt I used plain
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 1/2 cup all purpose flour
- 1 cup whole wheat flour
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups fresh strawberries diced
- 1/2 cup strawberry jam
Instructions
- Preheat oven to 350 degrees. Grease 18 muffin tins.
- In a large mixing bowl, combine butter, milk, yogurt, eggs and vanilla. Mix until smooth. Be careful when combining the melted butter with the wet ingredients. If the butter is too hot, the eggs will cook!
- Add in the flour, sugar, salt, baking powder and baking soda. Mix until well combined.
- Add the jam and stir into the batter. Finally add the strawberries to the batter and carefully fold in. I chose to leave 1/4 of the fresh strawberries to top the muffins before baking. This is optional.
- Fill each muffin tin with the strawberry muffin batter. Top with strawberries and coarse sugar, optional.
- Bake for 25-30 minutes until toothpick comes out clean when inserted. Let cool for 5 minutes and remove from muffin tin to cool on wire rack.
