First, let’s talk about apples. The best baking apples in my opinion are always Granny Smith. They are dry, tart and bake up beautifully.
You don’t want your apple to go all mushy on you. And Granny Smiths hold their texture and have a great apple-y flavor.
Other varieties that work well are HoneyCrisp, Fuji, Braeburn and Jonagold. Since apples are the star ingredient in this puff pastry apple tart, choose the best varieties for baking.
Puff Pastry Apple Tart Ingredients
Ok, now there are a few other ingredients that I used for this apple tart. Brown sugar, store bought puff pastry, a pinch of salt and since it’s fall, I added in some cinnamon and nutmeg too.
Fresh ground nutmeg is always better. It has a certain bite to it that doesn’t always come out in the store bought pre-ground version. So, if you can, grate some for this recipe.
The brown sugar brings out the sweetness in the Granny Smith apples and creates a beautiful glaze over the apple tart.
But the winning ingredients in this recipe is using store bought puff pastry. This saves so much time, comes out beautifully and tastes as delicious as if it came from a French bakery!
How To Make Tarte Tatin
Now, a few tips for making this classic french tarte tatin, or Apple Tart.
Prep the Puff Pastry
First, take your puff pastry out and unfold it, remove the paper and then cut it half to form two rectangles and place them on a parchment-lined baking sheet.
Now, don’t do what I did and forget to defrost the pastry first. I missed that step and had to wait a day for the pastry to defrost in the fridge. Minor oversight, lol!
So after you have the pastry on the baking sheet, pop it back into the freezer to keep cold for a few minutes while we prep the apples.
Core and Slice The Apples
Core and slice your apples. Don’t worry about peeling them unless that is your preference.
Slice your apple in half, take the core out and then thinly slice the apple into 1/4″ thick slices. The more uniform the better, as this will help the apple bake more evenly, but this isn’t rocket science. So, don’t stress over this step!
Once you have the apples sliced, throw them in a bowl and add the brown sugar, pinch of salt, cinnamon and nutmeg. Stir together and let sit while you prep the puff pastry and preheat the oven to 425 degrees Fahrenheit.
Take your baking sheet with the puff pastry out of the freezer and brush it with an egg wash. This is 1 egg yolk whisked with 1 tsp. of water. Brush the pastry all over. This is going to give the edges of your puff pastry apple tart a beautiful golden glow.
Then, score the edges of the puff pastry about 3/4″ from the edge. Don’t cut all the way through, but this step will create a nice crisp edge.
Assemble and Bake the Puff Pastry Apple Tart
Now, start assembling the puff pastry apple tart. Arrange the apples inside the rectangle, layering as you go. Make it pretty but don’t fret too much over this step.
And try not to eat all the delicious brown sugar and cinnamon glazed apple slices while assembling. They are so good!
Bake, drizzle, eat!
Once you have the tarts assembled, pop the baking sheet into your preheated oven and bake for 20-22 minutes or until the crust turns a beautiful golden brown.
Before serving, drizzle with some caramel sauce or serve with vanilla ice cream. Yum!

Puff Pastry Apple Tart
Ingredients
- 4 apples granny smith or fuji work best
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 pinch salt
- 1 package puff pastry
- 1 egg yolk
- caramel syrup for serving
Instructions
- Remove the puff pastry from the freezer and defrost according to the package directions.
- Once the puff pastry has defrosted, unfold it and remove the paper. Cut it in half to form two rectangles and place on a parchment lined baking sheet. Place back in freezer until after you are done prepping the apples.
- Core and thinly slice the apples in uniform slices – about 1/4" thick. Place in a bowl and add the brown sugar, cinnamon, nutmeg and pinch of salt. Stir together and allow to sit while you preheat the oven and prep the puff pastry.
- Preheat the oven to 425 degrees fahrenheit.
- Remove the puff pastry from the freezer and make your egg wash. Combine one egg yolk with 1 tsp water. Whisk to combine and brush the puff pastry all over.
- Score the edges of the puff pastry about 3/4" away from the edge. Don't cut all the way through. This will allow the puff pastry to create a nice even crust.
- Now, arrange the apples on the puff pastry rectangles in even lines, layering as you go. Place in preheated oven and bake for 20-22 minutes until the crust is golden brown.
- Remove from the oven and drizzle with caramel sauce.
